Ingredients

Apple Cinnamon Muffins:

  • 1 cup apples peeled and diced
  • 1 teaspoon lemon juice
  • 1/2 cup granulated sugar
  • 1 1/2 cup all-purpose flour
  • 2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup unsweetened apple sauce
  • 1/2 cup butter unsalted and melted
  • 1 teaspoon vanilla extract

Streusel Topping

  • 1/4 cup butter unsalted and melted
  • 1/2 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup pecans diced
  • 1 teaspoon ground cinnamon

Instructions

  1. In a large bowl, combine the diced (peeled) apples with the lemon juice, and toss to coat. Set aside.

  2. In a large mixing bowl, add the flour, sugar, baking powder, and seasonings, and mix well. And in another bowl, add the wet ingredients, the eggs, apple sauce, butter, and vanilla extract.

  3. Fold the wet ingredients into the dry ingredient and mix well. Fold in the apples. Line your muffin tin with paper muffin liners, or spray them with cooking spray. Fill the muffin tin, about 2/3 the way full.

  4. Sprinkle the streusel topping on top, and then set the muffin tin into the air fryer basket, set the temperature to 320 degrees F, and cook for 10 to 12 minutes, using the air fryer setting.
