Description

Ingredients 

  • 1 cup butter, room temperature and unsalted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup canola oil
  • 2 cups pumpkin puree
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1/4 cup milk
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 teaspoons pumpkin spice
  • 1 teaspoon ground cinnamon

Cream Cheese Frosting

  • 8 ouces cream cheese, room temperature
  • 1/2 cup butter, unsalted and room temperature
  • 2 1/2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 2 tablespoons heavy cream

Instructions

  • Spray your cake pan with cooking spray. Then in a large bowl, cream the brown sugar, white granulated sugar, and butter. Beat until the sugars are fluffy. Fold in the oil and pumpkin. Scrape the sides down, so the mixture is well combined.
  • Then add the eggs, and vanilla extract, and mix well. Then in another bowl, add the flour, baking powder, baking soda, salt, pumpkin spice, and ground cinnamon. Mix well. Then fold the dry ingredients into the wet ingredients.
  • Divide the cake batter into two pans (the size will be determined by the size of your air fryer) I was able to make two eight-inch cakes.

Frosting

  • Add all of your ingredinetes to a large mixing bowl, and use iether a hand mixer, or a stand mixer, and blend until smooth.
  • When the cakes are cooled, add a layer of icing, between the cakes, and then add an icing layer on top, and decorate with candy.
