Ingredients
1cupbutter, room temperature and unsalted
1cupgranulated sugar
1/2cupbrown sugar
1/2cupcanola oil
2cupspumpkin puree
4largeeggs, room temperature
1tablespoonpure vanilla extract
1/4cupmilk
2 1/2cupsall-purpose flour
1teaspoonbaking powder
1teaspoonbaking soda
1teaspoonsalt
4teaspoonspumpkin spice
1teaspoonground cinnamon
Cream Cheese Frosting
8oucescream cheese, room temperature
1/2cupbutter, unsalted and room temperature
2 1/2cupspowdered sugar
1teaspoonpure vanilla extract
1/2teaspoonsalt
2tablespoonsheavy cream
Instructions
Spray your cake pan with cooking spray. Then in a large bowl, cream the brown sugar, white granulated sugar, and butter. Beat until the sugars are fluffy. Fold in the oil and pumpkin. Scrape the sides down, so the mixture is well combined.
Then add the eggs, and vanilla extract, and mix well. Then in another bowl, add the flour, baking powder, baking soda, salt, pumpkin spice, and ground cinnamon. Mix well. Then fold the dry ingredients into the wet ingredients.
Divide the cake batter into two pans (the size will be determined by the size of your air fryer) I was able to make two eight-inch cakes.
Frosting
Add all of your ingredinetes to a large mixing bowl, and use iether a hand mixer, or a stand mixer, and blend until smooth.
When the cakes are cooled, add a layer of icing, between the cakes, and then add an icing layer on top, and decorate with candy.
