To Make The Cookie: Place your cut parchment paper into the air fryer bottom basket. Spray with non-stick cooking spray. Place your cookie dough (raw) onto the sprayed parchment paper. Set the temperature for 400 degrees F. And set the time for 5 minutes.
Put your toppings into individual bowls.
Turn a cookie upside-down and put a scoop of ice cream onto it.
Place another cookie on top, right-side-up, pressing gently.
Use a knife or icing spatula to even out any ice cream from the sandwich.
Roll into the topping of your choice.
If it doesn’t seem to stick, use your hand to press the topping onto the ice cream.
Place the finished ice cream sandwich on a cookie sheet covered with a piece of parchment paper.
Put in the freezer for 10-20 minutes to harden.
Store by wrapping each ice cream sandwich in a piece of parchment paper and place in a gallon freezer storage bag.
