If you love chocolate chip cookies and ice cream, you're going to love this Air Fryer Chocolate Chip Cookie Ice Cream Sandwich! This easy dessert recipe is perfect for summertime. It's a quick and easy way to satisfy your sweet tooth!

Ingredients 

Cookies:

  • 1 package Pillsbury Cookies, either M&M or Chocolate Chip Cookies

Ice Cream Sandwiches:

  • 2 cups ice cream, vanilla
  • 1/4 cup mini chocolate chips
  • 1/4 cup coconut flakes
  • 1/4 cup sliced almonds
  • 1/4 cup walnut pieces
  • 1/4 cup sprinkles

Instructions

  • To Make The Cookie: Place your cut parchment paper into the air fryer bottom basket. Spray with non-stick cooking spray. Place your cookie dough (raw) onto the sprayed parchment paper. Set the temperature for 400 degrees F. And set the time for 5 minutes.
  • Put your toppings into individual bowls.
  • Turn a cookie upside-down and put a scoop of ice cream onto it.
  • Place another cookie on top, right-side-up, pressing gently.
  • Use a knife or icing spatula to even out any ice cream from the sandwich.
  • Roll into the topping of your choice.
  • If it doesn’t seem to stick, use your hand to press the topping onto the ice cream.
  • Place the finished ice cream sandwich on a cookie sheet covered with a piece of parchment paper.
  • Put in the freezer for 10-20 minutes to harden.
  • Store by wrapping each ice cream sandwich in a piece of parchment paper and place in a gallon freezer storage bag.
