In a large bowl, toss the chicken wings with flour, baking powder, salt, and pepper until well coated.
Preheat your air fryer to 380°F (193°C).
Place wings in a single layer in the basket (work in batches if needed).
Air fry for 24–26 minutes, flipping halfway through, until crispy and golden brown.
While the wings cook, combine soy sauce, honey, brown sugar, vinegar, ginger, garlic, and sesame oil in a small saucepan. Bring to a simmer.
Mix cornstarch and water in a separate bowl and stir it into the sauce. Simmer for 2–3 minutes until thickened.
Once the wings are done, transfer them to a large bowl. Pour the garlic-ginger sauce over the wings and toss to coat.
Top with sesame seeds or chopped green onions if desired.
