  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 1 tablespoon chopped fresh thyme
  • 1/2 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley, plus more for garnish
  • 1/4 teaspoon ground turmeric
  • 3/4 teaspoon salt

Topping

  • 12 ounces savory herb stuffing mix

Instructions

  • Heat the oven to 375°F and spray a 9×13-inch dish.
  • Melt 1/2 cup butter in a large pot over medium heat. Cook the onion, carrot and celery 6–8 minutes; stir in the thyme.
