Perkins Potato Pancakes

Description

Copycat Perkins potato pancakes made with a smooth batter and shredded hash browns, cooked golden and crisp on a griddle, Blackstone, or in the air fryer.

Ingredients 

  • 16 oz frozen shredded hash browns, thawed and squeezed very dry
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup whole milk
  • 2 large eggs
  • 2 tablespoons butter, melted, plus more for the pan
  • ¼ cup yellow onion, finely grated
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  • Spread the thawed hash browns on a clean kitchen towel and press firmly to remove as much moisture as possible. Set aside.
  • In a large bowl, whisk together the flour, baking powder, sugar, salt, and pepper.
  • Add the milk, eggs, and melted butter. Whisk until the batter is completely smooth with no lumps.
  • Fold in the grated onion, parsley, and dried hash browns until every strand is coated. The mixture will be thick and scoopable.
  • Let the batter rest 10 minutes while you heat the pan.
  • Heat a large skillet or griddle over medium heat, about 350°F. Melt 1 tablespoon of butter and let it foam.
  • Drop ¼-cup scoops of batter into the pan, leaving space between them. Press each to about ½ inch thick with the back of a spatula.
  • Cook 3 to 4 minutes, until deep golden brown and releasing easily. Flip once and cook 2 to 3 minutes more.
  • Transfer to a wire rack set on a sheet pan in a 200°F oven to hold. Add fresh butter to the pan and repeat with the remaining batter.
  • Serve hot with applesauce and sour cream.

Notes

  • Blackstone: heat to medium (about 350°F), butter the surface, and cook in batches of twelve using the same timing. Re-butter between batches.
  • Air fryer: form the batter into patties by hand, line the basket with parchment, spray both sides with oil, and cook at 380°F for 12 to 14 minutes, flipping halfway. Softer texture than pan-fried.
  • Fresh potatoes: substitute 2 large Russets, shredded, rinsed in cold water until clear, and squeezed completely dry.
  • Gluten free: use a cup-for-cup gluten-free blend containing xanthan gum.
  • Do not stack hot pancakes on a plate. Use a wire rack or the crust softens.
