Tender air fryer chicken, crisp green beans, and onions tossed in a savory garlic-ginger soy sauce, just like Panda Express.
Ingredients
Chicken
1lbboneless, skinless chicken breast, cut into 1-inch pieces
1/2tspsalt
1/2tspgarlic powder
1/2tspbaking soda
1tbsparrowroot, or cornstarch
1tbspcoconut aminos or soy sauce
1tbspolive oil
Sauce
1/4cupchicken broth
2tbspcoconut aminos, or soy sauce
1tbsppeach jam, or apricot jam
1tspcornstarch, or arrowroot
1tbspgarlic, minced
1tspginger, freshly grated
Vegetables
1tbspolive oil
8ozfresh green beans, about 2 1/2 cups, trimmed and cut into 2-inch pieces
1mediumyellow onion, thinly sliced
1/4tspof salt
To serve: cooked rice and sesame seeds
Instructions
Toss the chicken with the salt, garlic powder, baking soda, arrowroot, coconut aminos and olive oil. Refrigerate for 15 to 30 minutes.
Whisk together the broth, coconut aminos, jam and cornstarch. Set aside.
Preheat the air fryer to 370°F for 3 minutes. Air fry the chicken in a single layer for 8 to 10 minutes, shaking halfway, until it reaches 165°F.
Meanwhile, heat the oil in a large skillet over medium-high heat. Cook the green beans for 4 minutes. Add the onion and a pinch of salt and cook 2 to 3 minutes more.
Stir in the garlic and ginger and cook for 30 seconds.
Add the chicken and sauce and toss over high heat for 1 minute, until glossy and thickened. Serve over rice with sesame seeds.
