A rich, silky mushroom Alfredo copycat that comes together in one skillet in 25 minutes. Perfect over fettuccine, grilled chicken, or steak.
Ingredients
2tablespoonsolive oil
1tablespoonbutter
2cupscremini mushrooms, sliced ¼-inch thick
2clovesgarlic, minced
½cupchicken or vegetable broth
1cupheavy cream
¼cupParmesan cheese, freshly grated
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium heat. Add mushrooms in a single layer and cook undisturbed 2–3 minutes, then stir and continue cooking until golden brown, 5–7 minutes total. Transfer to a plate.
Add butter to the same skillet. Once melted, add garlic and cook until fragrant, about 1 minute.
Pour in broth, scraping up the browned bits from the bottom of the pan. Add heavy cream, bring to a gentle simmer, and cook 5–7 minutes until slightly thickened.
Reduce heat to low. Stir in Parmesan a little at a time until melted and smooth. Season with salt and pepper.
Return mushrooms to the skillet and simmer 2–3 minutes to combine.
Serve immediately over pasta, chicken, or steak. Garnish with parsley.

Notes
To thicken: simmer longer, add more Parmesan, or whisk 1 tablespoon flour into the butter and garlic before adding broth.
For pasta: this sauce coats about 12 ounces of dry pasta. Reserve 1 cup of pasta water and add it a splash at a time while tossing.
Don't boil after adding cheese — that's what causes graininess.
