Description

Ninja Woodfire Blueberry Muffins -- Indulge in these fluffy and flavorful Ninja Woodfire Blueberry Muffins—the perfect breakfast or afternoon snack recipe.

Ingredients 

Muffins:

  • ½ cup salted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temp
  • ½ cup heavy cream
  • 1 tablespoon vanilla extract
  • 2 cups self-rising flour

Blueberry Mix:

  • 1 ½ - 2 cups fresh and rinsed blueberries
  • 1-2 tablespoons all-purpose flour

Optional Topping:

  • ½ cup nuts of choice, chopped
  • 1 cup self-rising flour
  • 1 tablespoon cinnamon
  • ½ cup light brown sugar, packed
  • 6 tablespoons salted butter, softened

Instructions

  • Optional if wanting a wood flavoring: Place a scoop of food-grade wood pellets into the wood pellet burner of your Ninja Woodfire grill. Remember to not use any wood pellets that are not food-grade safe.
  • Turn on the Ninja Woodfire grill to the desired setting. For these pancakes the ‘bake ‘ setting is recommended.
  • If using wood pellets, press the Woodfire Flavor Technology button. Next, set the heat to ‘Lo’ heat. Allow the Ninja Woodfire to Preheat. Be sure to not add food to the Ninja Woodfire until the display says ‘Add Food’.
  • While the Ninja Woodfire is preheating, prepare the ninja woodfire blueberry muffins.
  • Add muffin liners to a count muffin pan.
  • Add the softened butter and granulated sugar to a stand mixer or metal bowl.
  • Beat the softened butter and granulated sugar together until the mixture becomes a pale yellow.
  • Slowly add in the eggs, heavy cream, and vanilla extract.
  • To avoid lumps, slowly add the flour to the mixture. Mix until everything is mixed together and the batter is smooth with no lumps of pockets of flour. Set aside.
  • Add the rinsed blueberries to a bowl with the flour. Do not dry the blueberries after rinsing. The moisture will help the flour stick to the blueberries.
  • Fold the blueberry mix into the blueberry muffin batter.
  • If making the optional topping, add the chopped nuts, flour, cinnamon, brown sugar, and butter to a bowl. Mix everything together but try not pack it down. Use your hands to crumble the mixture in the bowl without pressing the dough together.
  • Fill each liner of the prepared muffin pan ¾ of the way full.
  • Sprinkle the topping over each muffin and only slightly press the mixture in.
  • Add the cupcake pan to the woodfire grill, close the lid, and bake for 25 minutes or until golden brown on top and the dough is firm.
  • Once done, allow the muffins to cool for 5 minutes in the muffin pan off the heat. Then, remove the muffins from the pan and allow them to cool on a wire rack for 5-10 more minutes.
