Description

A tender 6-inch vanilla layer baked in the Ninja Crispi using a metal pan inside the glass container. The foil-shield method keeps the PowerPod from scorching the top before the center sets.

Ingredients 

  • 1 cup all-purpose flour, 120g
  • cup granulated sugar, 135g
  • teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ cup unsalted butter, melted and slightly cooled, 57g
  • 2 large eggs, room temperature
  • cup whole milk, room temperature, 80ml
  • teaspoons pure vanilla extract

Instructions

  • Grease a 6-inch round cake pan, line the bottom with a parchment round, and grease the parchment.
  • Leave the crisper plate in the 4-qt glass container so the pan sits elevated.
  • Whisk the flour, sugar, baking powder, and salt together in a medium bowl.
  • In a separate bowl, whisk the melted butter, eggs, milk, and vanilla until smooth.
  • Pour the wet into the dry and stir just until no dry flour remains, 20 to 30 seconds. Do not overmix.
  • Pour into the prepared pan, filling no more than two-thirds. Level the top.
  • Dome a square of foil over the pan and crimp the edges down firmly so the fan can't lift it.
  • Set the pan on the crisper plate, install the adapter and PowerPod, select BAKE, and set 18 minutes. (Crispi Pro: 325°F.)
  • Remove the foil carefully. Reinstall the PowerPod and bake 5 to 7 more minutes, until golden and a toothpick in the center comes out clean.
  • Cool in the pan 10 minutes, then run a knife around the edge, invert onto a rack, and peel the parchment.
  • Cool completely, about 45 minutes, before frosting.

Notes

  • Room temperature eggs and milk are essential. Cold ingredients solidify the melted butter into a greasy layer at the bottom.
  • Leave at least half an inch between pan and container wall. A pan that fills the footprint chokes the airflow.
  • Fill no more than two-thirds. Risen batter needs to stay clear of the heating element.
  • FN100 owners: no Bake mode. Use Recrisp, keep the foil on, start checking at 16 minutes. Glassware is rated to 400°F.
  • Doneness target: 205–210°F in the center.
  • Reheat slices 2 to 3 minutes on Recrisp rather than microwaving.
