Description

Juicy Ninja Crispi steak with a real crust and an edge-to-edge pink center, cooked on Max Crisp in about 11 minutes. A dry brine builds the surface, a midpoint flip browns both sides, and pulling at 127°F lands it at a perfect medium-rare after resting.

Ingredients

Ingredients

  • 1 New York strip or ribeye steak, 1 inch thick (12–16 oz)
  • ¾ tsp kosher salt
  • ½ tsp freshly cracked black pepper
  • 1 tsp avocado oil
  • ½ tsp garlic granules, optional
  • ½ tsp onion granules, optional

Compound butter:

  • 3 tbsp unsalted butter, softened
  • 1 garlic clove, minced
  • 1 tbsp fresh parsley, minced
  • 1 tsp Worcestershire sauce

Instructions

  • Salt the steak on both sides and rest uncovered on a rack in the fridge for 45 minutes to 24 hours. Then bring to room temperature for 30 minutes.
  • Mash the compound butter ingredients together in a small bowl. Set aside.
  • Pat the steak completely dry. Rub with a thin film of avocado oil and season with pepper and granules.
  • Insert the crisper plate into the glass container. Optional: add 2 tbsp water to the base beneath the plate to reduce smoke.
  • Optional: run Max Crisp empty for 2–3 minutes to preheat.
  • Place the steak on the crisper plate. Set Max Crisp for 9–11 minutes for medium-rare, flipping at the halfway point.
  • Check with an instant-read thermometer starting at 7 minutes. Pull at 125–128°F for medium-rare — it will rise another 5–8°F while resting.
  • Top with a spoonful of compound butter, replace the PowerPod for 45 seconds to melt it, then transfer to a warm plate.
  • Rest 5–8 minutes. Slice against the grain and serve.

Equipment

  • Ninja Crispi Air Fryer
  • Tongs

Notes

  • Max Crisp runs 425–450°F on standard Crispi models; there's no manual temperature setting.
  • Times are for a 1-inch steak at room temperature. See the full chart above for other thicknesses.
  • Steak thickness varies more than you'd expect between packages. The thermometer is the real instruction; the clock is a guideline.
