Description

This easy Ninja Creami watermelon Italian ice is a light, refreshing, dairy-free frozen dessert made with just four simple ingredients. Fresh watermelon, sugar, water, and lime blend into a smooth, scoopable Italian ice that's perfect for hot summer days.

Ingredients 

  • 2 cups fresh seedless watermelon, cut into chunks
  • 3 tablespoons granulated sugar, or sweetener of choice
  • 2 tablespoons water
  • 1 tablespoon fresh lime juice, optional

Instructions

  • Blend the base. Add the watermelon chunks, sugar, water, and lime juice to a blender. Blend until completely smooth, about 30 seconds, then stir to make sure the sugar has fully dissolved.
  • Fill the pint. Pour the mixture into a Ninja Creami pint container, stopping at the max fill line to leave room for expansion. Snap on the lid.
  • Freeze. Place the pint on a level surface in the freezer and freeze for at least 24 hours, until completely solid.
  • Process. Remove the lid, lock the pint into the Ninja Creami outer bowl, install it in the machine, and press the Italian Ice button (use Sorbet if your model doesn't have Italian Ice).
  • Re-spin if needed. If the texture looks crumbly or powdery after the first cycle, run the Re-spin function once until smooth and fluffy.
  • Serve. Scoop into chilled cups or cones and serve immediately. Garnish with a watermelon wedge or fresh mint if desired.

Notes

  • Use the ripest, sweetest watermelon you can find for the best color and flavor with less added sugar.
  • Taste the base before freezing — it should taste slightly sweeter than you want, since freezing dulls sweetness.
  • For a lower-sugar version, use a 1:1 monk fruit or erythritol blend and add a splash more water to keep it from freezing too hard.
  • Store leftovers in the pint with the lid on for up to 1 week; re-process on the Italian Ice setting to restore the texture.
