Description

A rich, dark chocolate Ninja Creami ice cream loaded with roasted almonds and miniature marshmallows — a spot-on copycat of Blue Bell's classic Rocky Road, made at home with no ice cream maker.

Ingredients 

  • 1 cup whole milk
  • ¾ cup heavy whipping cream
  • cup granulated sugar
  • 3 tablespoons Dutch-process cocoa powder
  • 2 tablespoons instant chocolate pudding mix, dry
  • 1 teaspoon pure vanilla extract
  • teaspoon fine salt

Mix-ins

  • cup mini marshmallows
  • cup chopped roasted almonds
  • 2 tablespoons mini semi-sweet chocolate chips, optional

Instructions

  • Whisk milk, cream, sugar, cocoa, pudding mix, vanilla, and salt until smooth with no lumps.
  • Pour into a Ninja Creami pint, staying at or below the MAX FILL line; seal.
  • Freeze flat on a level shelf for 24 hours.
  • Remove lid, lock into the outer bowl, and run the ICE CREAM function.
  • If crumbly, run RE-SPIN until smooth and creamy.
  • Dig a hole in the center; add marshmallows, almonds, and chocolate chips; run MIX-IN once.
  • Serve immediately for soft-serve, or freeze 15–20 minutes for a firmer scoop.

Notes

No instant pudding? Use 1 tablespoon cornstarch or softened cream cheese in the base. Toast almonds for extra flavor and always add marshmallows during the Mix-In cycle so they stay chewy.
