½cupmayonnaise
¼cupbarbecue sauce, a sweet, smoky variety works best
1tablespoonketchup
2teaspoonsadobo sauce, from a can of chipotle peppers in adobo
1teaspoonhoney, or brown sugar
½teaspoonsmoked paprika
¼teaspoongarlic powder
¼teaspoononion powder
1teaspoonapple cider vinegar, or lime juice
¼teaspoonsalt, to taste
Instructions
Combine the base. In a small bowl, whisk together the mayonnaise, barbecue sauce, and ketchup until smooth.
Add the smoky heat. Stir in the adobo sauce, smoked paprika, garlic powder, and onion powder.
Balance it out. Add the honey and vinegar (or lime juice), then taste. Adjust sweetness, heat, and salt until it tastes right to you.
Rest, then serve. Cover and chill for at least 20 to 30 minutes so the flavors meld. Serve cold.
