Description

A keto copycat of the McDonald's Sausage McGriddle, built on air-fried fathead dough buns instead of pancakes. Sausage, egg, cheese and sugar-free maple syrup at 6g net carbs per sandwich.

Ingredients 

Fathead Dough:

  • 8 ounces shredded low-moisture mozzarella cheese
  • 2 ounces cream cheese
  • 1 cup blanched almond flour
  • 1 large egg

McGriddle Filling:

  • 4 large sausage patties, cooked
  • 4 large eggs, scrambled or fried
  • 4 slices American cheese, or cheddar cheese
  • 8 slices bacon, cooked
  • 4 tablespoons sugar-free maple syrup, or melted butter

Instructions

  • Combine the mozzarella and cream cheese in a medium microwave-safe bowl. Microwave for 1 minute, stir, then microwave 30 seconds more until fully combined.
  • Stir the almond flour into the melted cheese.
  • Let the mixture cool briefly so it's warm but not hot, then add the egg. If the cheese is too hot the egg will cook.
  • Stir until combined, then knead by hand until no dry flour remains.
  • Press the dough into a flat rectangle about ½ inch thick between two sheets of parchment paper.
  • Cut rounds using a biscuit cutter or the rim of a drinking glass. Re-press and cut the scraps.
  • Spray the rounds with cooking spray and air fry at 400°F for 7 minutes. Flip and air fry 7 minutes more, until browned and firm.
  • Let the buns cool for 2 minutes, then brush the cut sides with sugar-free maple syrup.
  • Stack each sandwich with a sausage patty, a cheese slice, an egg and two strips of bacon.
  • Return to the air fryer for 30 seconds if you'd like the cheese fully melted, then serve warm.

Notes

Net carbs: 6g per sandwich (9g total carbohydrate − 3g fiber). Use low-moisture shredded mozzarella, not fresh — fresh mozzarella has too much water for fathead dough. Buns keep 2–3 days refrigerated or 2–3 months frozen.
