Description

This Joanna Gaines-inspired blue cheese dressing is creamy, tangy, and loaded with chunky blue cheese crumbles. Made with sour cream, buttermilk, fresh chives, and garlic, it's ready in 5 minutes and perfect for wedge salads, buffalo wings, and veggie dipping.

Ingredients

  • 4 ounces blue cheese, crumbled and divided
  • 1 cup full-fat sour cream
  • ⅓ to ½ cup buttermilk
  • 2 tablespoons fresh chives, finely chopped and divided
  • 1 small garlic clove, finely grated
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon kosher salt, plus more to taste
  • 1 teaspoon fresh lemon juice, optional

Instructions

  • Mash the cheese: Add half of the blue cheese to a medium bowl and mash with a fork until mostly broken down.
  • Mix the base: Add the sour cream, ⅓ cup buttermilk, 1 tablespoon chives, garlic, pepper, salt, and lemon juice (if using). Stir until smooth and creamy.
  • Adjust the consistency: Leave thick for dipping, or stir in more buttermilk 1 tablespoon at a time for a pourable salad dressing.
  • Fold in the crumbles: Gently fold in most of the remaining blue cheese, reserving a small amount for garnish.
  • Chill and serve: Cover and refrigerate for at least 30 minutes. Top with the reserved blue cheese and chives before serving.

Equipment

  • Medium mixing bowl
  • Fork
  • Rubber Spatula
  • Microplane or fine grater
  • Airtight jar for storage

Notes

  • Best blue cheese: Danish blue or Gorgonzola for a milder flavor; Roquefort or Stilton for a sharper bite.
  • Thicker dip: Use only 2 tablespoons buttermilk and chill for 1 hour.
  • Richer dressing: Replace ¼ cup of the sour cream with mayonnaise.
  • No buttermilk: Mix ½ cup milk with 1 teaspoon lemon juice and let sit 5 minutes.
  • Storage: Keeps in an airtight container in the refrigerator for up to 5 days. Stir before serving. Do not freeze.
