Description

Easy Instant Pot Ranch Chicken and Rice with tender chicken, creamy ranch-flavored rice, and minimal cleanup. Perfect for quick weeknight dinners.

Ingredients 

  • 1 pound Chicken, chicken breasts or boneless chicken thighs
  • 1 cup Rice, long-grain white rice (or wild/white blend)
  • 2 tablespoons Ranch Seasoning
  • 1 3/4 cups Chicken Broth
  • 2 tablespoons Butter
  • 1 cup Vegetables, optional: Fresh or frozen veggies
  • 1/2 cup Cheese, optional, shredded

Instructions

  • Gather 1 pound Chicken, 1 cup Rice, 2 tablespoons Ranch Seasoning, 1 3/4 cups Chicken Broth, 2 tablespoons Butter, and any 1 cup Vegetables or 1/2 cup Cheese. Pat the chicken dry to ensure even cooking.
  • Turn the Instant Pot to sauté mode. Add a bit of butter or oil and lightly brown the chicken for extra flavor. This step is optional but adds depth.
  • Add the rice, ranch seasoning, and vegetables (if using) to the pot. Stir to coat the rice evenly with the seasoning.
  • Pour the chicken broth over the rice and chicken, ensuring everything is evenly distributed.
  • Seal the Instant Pot lid and cook on high pressure for 8–10 minutes. Let it naturally release for 5 minutes, then carefully release any remaining pressure.
  • Stir in butter and shredded cheese for extra creaminess. Taste and adjust seasoning as needed.
  • Fluff the rice and plate the chicken. Garnish with fresh herbs if desired and enjoy!
