Description

Fluffy Instant Pot Greek Lemon Rice made in one pot with olive oil, garlic, chicken broth, fresh lemon, and dill. This easy Mediterranean side dish pairs with chicken, salmon, or grain bowls and is ready in about 25 minutes start to finish.

Ingredients 

  • cups long-grain white rice, jasmine or basmati
  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • cups low-sodium chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons fresh dill or parsley, chopped
  • Lemon wedges, for serving (optional)

Instructions

  • Rinse the rice. Place the rice in a fine-mesh strainer and rinse under cold water until the water runs clear. Drain well.
  • Sauté the aromatics. Set the Instant Pot to Sauté. Add the olive oil and onion and cook 3–4 minutes, until softened. Add the garlic and cook 30 seconds, until fragrant.
  • Toast the rice. Add the rinsed rice and stir 1 minute to coat the grains in oil.
  • Add the liquid. Pour in the chicken broth, salt, and pepper. Scrape the bottom of the pot with a wooden spoon to loosen any browned bits. Press Cancel.
  • Pressure cook. Lock the lid, set the valve to Sealing, and cook on High Pressure for 4 minutes.
  • Natural release. When the timer beeps, let the pressure release naturally for 10 minutes, then turn the valve to Venting to release any remaining pressure.
  • Finish. Open the lid, drizzle the lemon juice over the rice, add the dill, and fluff gently with a fork. Taste and adjust salt. Serve warm with lemon wedges.

Notes

  • Rinse well: Removing surface starch is the key to fluffy, separate grains.
  • Lemon goes in last: Adding the juice after cooking keeps the flavor bright and lets the rice cook evenly.
  • Brown rice: Use 1¾ cups broth and cook 22 minutes on High Pressure with a 10-minute natural release.
  • Doubling: Double all ingredients; keep the 4-minute cook time.
  • Storage: Refrigerate up to 4 days or freeze up to 1 month. Reheat with a splash of broth or water.
