Description

A 5-minute homemade pot roast seasoning blend made from 9 pantry spices. Better than store-bought packets, with no preservatives, less sodium, and customizable heat. Perfect for slow cooker, oven, or Instant Pot pot roasts.

Ingredients

  • 2 Tbsp sweet paprika
  • 1 Tbsp Italian seasoning
  • 1 Tbsp kosher salt, Diamond Crystal preferred
  • 1 Tbsp onion powder
  • 1 Tbsp garlic powder
  • 1 Tbsp dark brown sugar, packed
  • 2 tsp ground turmeric
  • 2 tsp freshly cracked black pepper
  • 1 tsp celery salt

Instructions

  • Add all spices to a small mixing bowl.
  • Whisk thoroughly with a fork for 30 seconds, or until color is fully uniform.
  • Break up any brown sugar clumps with the back of a spoon.
  • Funnel into a clean, completely dry airtight jar.
  • Label with the date prepared. Store in a cool, dark place for up to 6 months.
  • To use: rub 1 to 1.5 tablespoons per pound of meat directly onto a dry roast before searing or slow cooking.

Equipment

  • Mixing Bowl
  • Whisk

Notes

Notes

  • For best crust, dry-brine the rubbed roast uncovered in the fridge for 12–24 hours before cooking.
  • Cut salt by half if using table salt instead of kosher.
  • Doubles and triples beautifully — make a big batch for gifting in 4-oz jars.
