Ingredients
8ozred jalapeño peppers, stemmed and chopped
2headsgarlic, peeled
1teaspoonsalt
1teaspoonsugar
1/3cupwhite distilled vinegar
2tablespoonswater, divided
1teaspooncornstarch
Instructions
In a food processor or blender, combine the chopped red jalapeño peppers, garlic, salt, sugar, vinegar, and 1 tablespoon of water. Blend until slightly chunky.
Transfer the mixture to a saucepan and simmer over medium heat for 5–7 minutes, stirring occasionally. This will allow the flavors to meld.
In a small bowl, mix the remaining 1 tablespoon of water with the cornstarch to make a slurry. Stir this into the sauce and cook for an additional 1–2 minutes until thickened.
Remove the sauce from heat and let it cool completely. Store it in an airtight jar in the refrigerator for up to 2 weeks.
