Description

Make a homemade Big Mac that tastes like the drive-thru original, with thin seared beef patties, tangy special sauce, and all the classic layers. Cook it your way: air fryer, Blackstone, skillet, oven, or grill, ready in 30 minutes.

Ingredients

Patties

  • 1 pound ground beef, 80/20 preferred
  • Salt and pepper, to taste

Special Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

Assembly

  • 6 sesame seed hamburger buns, 4 for tops and bottoms, 2 extra bottoms for the middle layers
  • 4 slices American cheese
  • 1 cup finely shredded iceberg lettuce
  • 2 tablespoons finely diced white onion
  • 8 to 12 dill pickle slices

Instructions

  • Make the sauce. Whisk all sauce ingredients together and refrigerate while you cook.
  • Shape the patties. Divide the beef into 8 portions (about 2 ounces each), press into thin 1/4-inch rounds, and season with salt and pepper.
  • Cook the patties using your preferred method:
  • Air fryer: 375°F for 5 to 7 minutes, flipping halfway.
  • Blackstone: medium-high for 2 to 3 minutes, flip, then 1 to 2 minutes more.
  • Skillet: medium-high for 2 to 3 minutes per side.
  • Oven: 375°F for 10 to 12 minutes, flipping halfway.
  • Grill: high heat for about 2 minutes per side.
  • Melt the cheese. Add cheese to 4 of the patties during the last minute of cooking.
  • Toast the buns until lightly golden.
  • Assemble. Bottom bun, sauce, lettuce, cheese patty, middle bun, sauce, lettuce, onions, pickles, second patty, top bun.

Equipment

  • Small mixing bowl and whisk (for the sauce)
  • Parchment paper (for pressing thin patties)
  • Burger press or flat spatula
  • Instant-read meat thermometer
  • Cooking spray or neutral oil
  • Air fryer, Blackstone griddle, Cast iron or nonstick skillet, Rimmed baking sheet (oven method), or Outdoor grill or Ninja Foodi Grill

Notes

  • Cook beef to an internal temperature of 160°F.
  • The sauce makes enough for about 6 burgers and keeps up to 1 week in the fridge.
