Description

Soft, chewy, and loaded with caramel and pecans, this air fryer cookie is perfect for a quick dessert or snack.

Ingredients 

Caramel Pecan Air Fryer Cookie Ingredients:

  • 1/2 cup butter, unsalted and room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup all-purpose flour
  • 1/2 cup caramel baking bits
  • 1/2 cup pecans, diced

Topping Ingredients:

  • 1/2 cup caramel baking bits
  • 1 tablespoon heavy cream
  • 1 teaspoon coarse salt

Instructions

  • Spray a 7 inch round baking pan with spray oil.
  • In a large bowl using a hand mixer combine the 1/2 cup butter, 1/2 cup granulated sugar, and 1/2 cup brown sugar together until light and fluffy.
  • Beat in the 1 large egg and 1 teaspoon vanilla extract
  • Next beat in the 1/2 teaspoon baking soda, 1/2 teaspoon salt and 1 1/2 cup all-purpose flour.
  • Gently stir in the 1/2 cup pecans and1/2 cup caramel baking bits.
  • Pour the batter into your prepared pan.
  • Set air fryer temperature to 350 and set cook time for 10-12 minutes or until a toothpick inserted comes out clean.
  • In a small microwave safe bowl combine 1/2 cup caramel baking bits with the 1 tablespoon heavy cream and microwave for 30 seconds or until the caramel is melted and smooth.
  • Drizzle all over the top and sprinkle with 1 teaspoon coarse salt.
