Description

This Fourth of July Pasta Salad is a colorful and refreshing side dish perfect for summer gatherings. Ingredients 

  • 2 cups colorful pasta, bowtie, rotini, or similar
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Italian dressing
  • Salt and pepper to taste

Instructions

  • Boil the pasta according to the package instructions. Drain and rinse it with cold water to cool quickly.
  • While the pasta is cooking, dice the cucumbers, bell pepper, and red onion. Slice the cherry tomatoes and olives, and chop the fresh basil.
  • In a large bowl, combine the cooled pasta with the prepared veggies and fresh basil.
  • Gently mix in the crumbled feta cheese, then pour the Italian dressing over the salad. Toss everything together until evenly coated.
  • Add salt and pepper to taste, and toss again for a final mix.
