Ingredients
1/4cupred wine vinegar
2tablespoonsDijon mustard
1teaspoondried oregano
1clovegarlic, minced
1/2teaspoonkosher salt
1/4teaspoonground black pepper
1/2cupolive oil
2tablespoonsfresh lemon juice
1teaspoonhoney, optional, for slight sweetness
Instructions
In a small bowl or jar, whisk together 1/4 cup red wine vinegar2 tablespoons Dijon mustard1 teaspoon dried oregano, 1 clove garlic, 1/2 teaspoon kosher salt and 1/4 teaspoon ground black pepper until smooth.
Slowly drizzle in 1/2 cup olive oil while whisking constantly to create a creamy emulsion.
Stir in 2 tablespoons fresh lemon juice and mix until fully combined.
Taste and adjust seasoning if needed—add more lemon for tang or 1 teaspoon honey for sweetness.
