2cupsfull-fat coconut milk
1cupheavy cream
½cupsugar
½cupcoconut, shredded
Instructions
In a medium bowl or Ninja Creami pint container, combine 2 cups full-fat coconut milk, 1 cup heavy cream½ cup sugar, and shredded ½ cup coconut Stir until sugar is fully dissolved and the mixture is smooth.
Cover and refrigerate for at least 2 hours to chill fully, helping the gelato freeze evenly.
Pour the chilled mixture into the Ninja Creami pint container, not exceeding the max fill line. Freeze for at least 24 hours for best results.
Insert the frozen pint into the Ninja Creami and select the Gelato function. Let the machine process until smooth and creamy.
Scoop the coconut gelato into bowls or cones. Optionally, top with toasted coconut, chocolate chips, or fresh fruit for extra flavor and texture.
