Make Instant Pot Pork Fried Rice with tender pork, fluffy rice, and crisp vegetables. Quick, flavorful, and perfect for weeknight dinners.
Ingredients

sesame oil

pork

cut into 1-inch pieces

ginger

teaspoon
garlic powder

teaspoon
kosher salt

black pepper

olive oil

onion

peeled and diced

tablespoons
garlic

minced

large
eggs
1
cup
Jasmine rice
1/4
cup
soy sauce
1 1/2
cup
chicken broth
1/2
cup
frozen mixed vegetables

(thawed)
Instructions
Turn the Instant Pot to “Sauté” mode. Add
1 tablespoon sesame oil
and
1 tablespoon olive oil
, then cook the
1 pound pork
pieces until lightly browned.
Stir in
1 teaspoon ginger
,
1 teaspoon garlic powder
, diced
1 cup onion
, and minced
2 tablespoons garlic
. Sauté for 2–3 minutes until fragrant.
Mix in
1 cup Jasmine rice
,
1 1/2 cup chicken broth
1/4 cup soy sauce
,
1 teaspoon kosher salt
and
1 teaspoon black pepper
Stir well to combine.
Seal the lid and set the Instant Pot to high pressure for 6 minutes.
Carefully quick release the pressure. Push rice to one side, scramble the
2 large eggs
in the pot, then fold them into the rice.
Stir in thawed
1/2 cup frozen mixed vegetables
, adjust seasoning if needed, and serve hot.
