Instructions
Line a cutting board with a paper towel. Lay the p16 ounces dill pickle chips out on top, and top with another paper towel. Press down to absorb any excess liquid.
Prepare a dredging station. In a small mixing bowl, combine 2 cups all-purpose flour, 1/4 cup potato starch, s2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon paprika and 1/4 teaspoon garlic powder and remove ¼ cup of the flour mixture. In a separate bowl, beat the 2 large eggs and whisk in the 2 cups buttermilk. In a third bowl, combine the ¼ cup of the flour mixture with 1 cup breadcrumbs.
Dredge the pickles. First, coat the pickles in flour in the first bowl. Dip into the egg and buttermilk mixture and allow excess liquid to drip off. Then, toss in the breadcrumb mixture. Press the crumbs into the pickles. Place breaded pickles onto a wire rack over a baking sheet.
Preheat the air fryer temperature to 400 degrees F for 3-5 minutes. Once heated, line the basket with foil and add the pickles in a single layer. Spray lightly with canola oil and cook for 5 minutes. Flip the pickles over and spray again. Cook for 2 more minutes.
