Description

A hearty breakfast inspired by First Watch. This loaded omelet is packed with eggs, meats, veggies, and melty cheese for a filling, protein-rich meal that works for breakfast, brunch, or even breakfast-for-dinner.

Ingredients 

  • 4 large eggs
  • 2 tbsp milk, optional for fluffiness
  • 3 strips bacon, cooked and chopped
  • 1/2 cup ham, diced
  • 1/2 cup breakfast sausage, cooked and crumbled
  • 1/4 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 1/4 cup mushrooms, sliced and sautéed
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup Monterey Jack cheese, shredded
  • 1 tbsp butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  • Cook bacon, sausage, and vegetables ahead of time. Drain excess grease so the omelet doesn’t turn watery.
  • In a bowl, whisk eggs with milk, salt, and pepper until slightly frothy and well blended.
  • Heat butter in a nonstick skillet over medium-low heat. Pour in eggs, add fillings evenly, and cook until set. Fold carefully and cook until fully done and fluffy.

  • Small oven safe pan
  • Cooking Spray

Notes

Air Fryer Cooking Instructions: Pour mixture into a greased air fryer-safe pan. Cook at 300°F for 8-12 minutes until set in the center.
Oven Cooking Instructions: Bake in a greased dish at 350°F for 18-22 minutes until eggs are fully set and lightly golden.
