A hearty breakfast inspired by First Watch. This loaded omelet is packed with eggs, meats, veggies, and melty cheese for a filling, protein-rich meal that works for breakfast, brunch, or even breakfast-for-dinner.
Ingredients
4large eggs
2tbspmilk, optional for fluffiness
3stripsbacon, cooked and chopped
1/2cupham, diced
1/2cupbreakfast sausage, cooked and crumbled
1/4cupbell peppers, diced
1/4cuponions, diced
1/4cupmushrooms, sliced and sautéed
1/2cupcheddar cheese, shredded
1/4cupMonterey Jack cheese, shredded
1tbspbutter
Salt, to taste
Black pepper, to taste
Instructions
Cook bacon, sausage, and vegetables ahead of time. Drain excess grease so the omelet doesn’t turn watery.
In a bowl, whisk eggs with milk, salt, and pepper until slightly frothy and well blended.
Heat butter in a nonstick skillet over medium-low heat. Pour in eggs, add fillings evenly, and cook until set. Fold carefully and cook until fully done and fluffy.
