Easy Applebee’s Grilled Shrimp N’ Spinach Salad with Bacon Vinaigrette features juicy grilled shrimp, fresh spinach, crisp vegetables, and a smoky bacon dressing. Perfect for a quick, healthy, restaurant-style salad at home.
Ingredients
1½lbslarge raw shrimp, peeled and deveined
6cupsfresh baby spinach, washed and dried
6slicescooked bacon, crumbled
1cupcherry tomatoes, halved
½smallred onion, thinly sliced
1cupcucumber, sliced or diced
½cupbacon vinaigrette dressing
1tbspolive oil
1tbspfresh lemon juice
½tspsalt
¼tspfreshly ground black pepper
Instructions
Set the air fryer to 400°F (200°C) and let it preheat for 3–5 minutes.
Pat the 1½ lbs large raw shrimp dry with paper towels. Toss them in 1 tbsp olive oil, ½ tsp salt, ¼ tsp freshly ground black pepper and a 1 tbsp fresh lemon juice until evenly coated.
Arrange the shrimp in a single layer in the air fryer basket. Cook for 5–7 minutes, shaking or flipping halfway through, until the shrimp turn pink, opaque, and slightly crispy on the edges.
In a large salad bowl, combine 6 cups fresh baby spinach, c1 cup cherry tomatoes, ½ small red onion, 1 cup cucumber, and crumbled 6 slices cooked bacon.
Place the cooked shrimp on top of the salad. Drizzle with ½ cup bacon vinaigrette dressing and toss gently to coat everything evenly.
Divide the salad among plates and garnish with extra bacon or lemon wedges if desired. Serve immediately for the freshest flavor and crisp texture.
