Description

Easy Applebee’s Grilled Shrimp N’ Spinach Salad with Bacon Vinaigrette features juicy grilled shrimp, fresh spinach, crisp vegetables, and a smoky bacon dressing. Perfect for a quick, healthy, restaurant-style salad at home.

Ingredients 

  • lbs large raw shrimp, peeled and deveined
  • 6 cups fresh baby spinach, washed and dried
  • 6 slices cooked bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 1 cup cucumber, sliced or diced
  • ½ cup bacon vinaigrette dressing
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper

Instructions

  • Set the air fryer to 400°F (200°C) and let it preheat for 3–5 minutes.
  • Pat the 1½ lbs large raw shrimp dry with paper towels. Toss them in 1 tbsp olive oil, ½ tsp salt, ¼ tsp freshly ground black pepper and a 1 tbsp fresh lemon juice until evenly coated.
  • Arrange the shrimp in a single layer in the air fryer basket. Cook for 5–7 minutes, shaking or flipping halfway through, until the shrimp turn pink, opaque, and slightly crispy on the edges.
  • In a large salad bowl, combine 6 cups fresh baby spinach, c1 cup cherry tomatoes, ½ small red onion, 1 cup cucumber, and crumbled 6 slices cooked bacon.
  • Place the cooked shrimp on top of the salad. Drizzle with ½ cup bacon vinaigrette dressing and toss gently to coat everything evenly.
  • Divide the salad among plates and garnish with extra bacon or lemon wedges if desired. Serve immediately for the freshest flavor and crisp texture.
