Description

Quick and healthy air fryer vegetable fried rice with colorful veggies, tender rice, and savory flavor. Perfect for a fast weeknight or meatless meal.

Ingredients 

  • 2 cups cooked white, or brown rice
  • 1 cup carrots, diced small
  • 1 cup frozen, canned, or fresh peas
  • 1 cup bell peppers, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce, or more to taste
  • 1 tablespoon sesame oil
  • 2 green onions, chopped, for garnish
  • 2 eggs, beaten (optional, for extra protein

Instructions

  • Chop vegetables and beat eggs (if using). Have your chilled rice ready.
  • Set to 360°F (180°C) for 3–5 minutes.
  • Toss carrots, bell peppers, onions, and garlic with a drizzle of sesame oil. Air fry 5–7 minutes until tender-crisp, shaking halfway.
  • Add chilled rice, soy sauce, and a little sesame oil. Toss to combine and air fry 5–7 minutes, shaking halfway.
  • (Optional): Make a small well in the rice, pour in beaten eggs, and cook 2–3 minutes until incorporated.
  • Garnish with chopped green onions and serve immediately.
