Quick and healthy air fryer vegetable fried rice with colorful veggies, tender rice, and savory flavor. Perfect for a fast weeknight or meatless meal.
Ingredients

cooked white

or brown rice

cup
carrots
,
diced small
1
cup
frozen
,
canned, or fresh peas
1
cup
bell peppers
,
diced
1
small
onion
,
finely chopped
2
cloves
garlic
,
minced
2
tablespoons
soy sauce
,
or more to taste
1
tablespoon
sesame oil
2
green onions
,
chopped, for garnish
2
eggs
,
beaten (optional, for extra protein
Instructions
Chop vegetables and beat eggs (if using). Have your chilled rice ready.
Set to 360°F (180°C) for 3–5 minutes.
Toss carrots, bell peppers, onions, and garlic with a drizzle of sesame oil. Air fry 5–7 minutes until tender-crisp, shaking halfway.
Add chilled rice, soy sauce, and a little sesame oil. Toss to combine and air fry 5–7 minutes, shaking halfway.
(Optional): Make a small well in the rice, pour in beaten eggs, and cook 2–3 minutes until incorporated.
Garnish with chopped green onions and serve immediately.
