Description

Soft, buttery cookies filled with jam, baked quickly in the air fryer for a simple and delicious dessert or snack.

Ingredients 

  • 1 3/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt, (omit if using salted butter)
  • 1 1/2 sticks butter, room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup jam, strawberry

Instructions

  • In a medium bowl, whisk together the 1 3/4 cup all-purpose flour 1 teaspoon baking powder and 1 teaspoon salt Set aside.
  • In a large bowl, use a hand or stand mixer to cream the softened 1 1/2 sticks butter and 1/2 cup granulated sugar until light and fluffy.
  • Beat in the 1 large egg and 1 teaspoon vanilla extract until fully combined.
  • Gradually mix the dry ingredients into the wet ingredients until a soft dough forms. Do not overmix.
  • Roll the dough into small balls (about 1 inch each). Place them on a parchment-lined air fryer tray or air fryer basket.
  • Press your thumb or the back of a spoon into the center of each dough ball to create a small well.
  • Spoon a small amount of your favorite 1 cup jam into each thumbprint.
  • Place the tray in the air fryer and set air fryer temperature to 320 degrees F and set cook time for 6–8 minutes, or until edges are lightly golden and centers are set.
  • Allow cookies to cool for a few minutes before serving. Enjoy warm or at room temperature.
