This Easy Air Fryer Spanish Tortilla is a golden, fluffy potato-and-egg omelet ready in minutes. Perfect for breakfast, brunch, or a light dinner, it’s quick, flavorful, and fuss-free.
Ingredients
1/2smallonion, thinly sliced
1/2smallpotato, thinly sliced
1tablespoonolive oil
3largeeggs, beaten
1teaspoonsalt
1/2teaspoonblack pepper
1/2teaspoonparsley, chopped
Instructions
Preheat the air fryer temperature to 400 degrees F (200˚C), for 3-5 minutes.
Spray 2 small non-stick round tins with cooking spray.
Divide the onion slices between tins, then place the potato slices on top, seasoning with a pinch of salt and drizzling with olive oil. Cook for 10 minutes.
Once cooked, divide the egg mixture between the two cups, seasoning with salt and pepper. Turn Airfryer down to 325°F (165˚C) and cook for another 13 minutes.
Remove tins from air fryer and tip out onto a plate. Top with chopped parsley and serve.
