Description

This Air Fryer Skirt Steak is juicy, tender, and packed with beefy flavor. Seared on the stovetop then finished in the air fryer, this easy recipe is ready in under 15 minutes and works for any occasion — from weeknight dinners to taco night!

Ingredients 

  • 1.5 lbs skirt steak
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon steak seasoning, your favorite brand or homemade

Instructions

  • Pat the skirt steak dry with paper towels to remove surface moisture for better browning.
  • Season both sides evenly with salt, black pepper, and steak seasoning.
  • Preheat the air fryer to 400°F for 3–5 minutes so it’s fully hot before cooking.
  • Lightly brush the steak with olive oil on both sides.
  • Place the steak in a single layer in the air fryer basket.
  • Air fry at 400°F for 6–8 minutes, flipping halfway through for medium doneness (adjust time for preference).
  • Remove the steak and let it rest for 5 minutes so the juices settle.
  • Slice against the grain for the most tender texture and serve immediately.

Notes
• Always slice against the grain — this is the most important step for tender skirt steak.
• Use a meat thermometer: 125°F = rare, 135°F = medium rare, 145°F = medium, 150°F = medium well, 160°F+ = well done.
• For a marinade version, marinate up to 24 hours in the fridge. Pat dry before searing.
• Cooking times vary slightly by air fryer brand and steak thickness. Check the internal temperature frequently.
• Store leftovers in an airtight container in the fridge for up to 3 days.
• Reheat in the air fryer at 350°F for 3–4 minutes.
