Description

Quick and flavorful air fryer pesto shrimp with a crispy exterior and tender interior. Perfect for weeknight dinners, appetizers, or easy seafood meals.

Ingredients 

  • 1.5 lbs large shrimp, peeled and deveined
  • 3 tbsp pesto sauce, store-bought or homemade
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp lemon juice, freshly squeezed
  • 2 tbsp grated Parmesan cheese, optional
  • Fresh herbs for garnish, optional

Instructions

  • Set the air fryer temperature to 400 degrees F (200°C) and lightly spray the basket with cooking oil.
  • In a large bowl, toss the peeled and deveined 1.5 lbs large shrimp with 3 tbsp pesto sauce 1 tbsp olive oil, 1 tsp salt and ½ tsp black pepper until evenly coated.
  • Arrange the shrimp in a single layer in the air fryer basket. Set cook time for 6–8 minutes, shaking halfway through, until shrimp are golden and cooked through.
  • Squeeze 1 tbsp lemon juice over the shrimp and sprinkle with 2 tbsp grated Parmesan cheese if desired.
  • Add Fresh herbs for garnish and serve immediately. Enjoy the pesto shrimp on its own, over pasta, salad, or in tacos for a quick, flavorful meal.

Other Cooking Methods

  • Oven: Bake at 400°F (200°C) for 8–10 minutes on a parchment-lined baking sheet.
  • Stovetop: Cook shrimp in 1–2 tsp olive oil, 2–3 minutes per side until opaque.
  • Grill: Skewer shrimp and grill 2–3 minutes per side until lightly charred.
