Quick and flavorful air fryer pesto shrimp with a crispy exterior and tender interior. Perfect for weeknight dinners, appetizers, or easy seafood meals.
Ingredients
1.5lbslarge shrimp, peeled and deveined
3tbsppesto sauce, store-bought or homemade
1tbspolive oil
1tspsalt
½tspblack pepper
1tbsplemon juice, freshly squeezed
2tbspgrated Parmesan cheese, optional
Fresh herbs for garnish, optional
Instructions
Set the air fryer temperature to 400 degrees F (200°C) and lightly spray the basket with cooking oil.
In a large bowl, toss the peeled and deveined 1.5 lbs large shrimp with 3 tbsp pesto sauce1 tbsp olive oil, 1 tsp salt and ½ tsp black pepper until evenly coated.
Arrange the shrimp in a single layer in the air fryer basket. Set cook time for 6–8 minutes, shaking halfway through, until shrimp are golden and cooked through.
Squeeze 1 tbsp lemon juice over the shrimp and sprinkle with 2 tbsp grated Parmesan cheese if desired.
Add Fresh herbs for garnish and serve immediately. Enjoy the pesto shrimp on its own, over pasta, salad, or in tacos for a quick, flavorful meal.
