Description

These Easy Air Fryer Pesto Potatoes are crispy, tender, and full of fresh, herby flavor. A quick and simple side dish or appetizer, perfect for weeknight dinners or meal prep.

Ingredients 

  • 1 pound baby potatoes, or new potaotes
  • 4 tablespoons pesto, prepared
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt, or sea salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon red chili flakes, optional

Instructions

  • Cut your 1 pound baby potatoes into 1-inch pieces. Preheat your air fryer temperature to 400 degrees F, for 2-3 minutes.
  • In a large bowl add the diced potatoes, 4 tablespoons pesto, 1 tablespoon olive oil, 1 teaspoon kosher salt, 1/8 teaspoon red chili flakes, and 1/2 teaspoon black pepper, and mix well to coat the potatoes.
  • Place the coated potatoes, single layer, into the air fryer basket or on the air fryer tray. Set the cook time for 15-20 minutes at 400 degrees F, using the air fryer setting. Remove when the potatoes are fork-tender.
  • Serve with your favorite dipping sauce, and a pinch of salt.
