These Easy Air Fryer Pesto Potatoes are crispy, tender, and full of fresh, herby flavor. A quick and simple side dish or appetizer, perfect for weeknight dinners or meal prep.
Ingredients
1poundbaby potatoes, or new potaotes
4tablespoonspesto, prepared
1tablespoonolive oil
1teaspoonkosher salt, or sea salt
1/2teaspoonblack pepper
1/8teaspoonred chili flakes, optional
Instructions
Cut your 1 pound baby potatoes into 1-inch pieces. Preheat your air fryer temperature to 400 degrees F, for 2-3 minutes.
In a large bowl add the diced potatoes, 4 tablespoons pesto, 1 tablespoon olive oil, 1 teaspoon kosher salt, 1/8 teaspoon red chili flakes, and 1/2 teaspoon black pepper, and mix well to coat the potatoes.
Place the coated potatoes, single layer, into the air fryer basket or on the air fryer tray. Set the cook time for 15-20 minutes at 400 degrees F, using the air fryer setting. Remove when the potatoes are fork-tender.
Serve with your favorite dipping sauce, and a pinch of salt.
