Instructions
Begin by slicing the 3 peaches into 1-inch pieces, peeled if you prefer. Place them in a large bowl and stir in the 2 teaspoons ground cinnamon, 1/4 cup sugar and 2 teaspoons cornstarch. Toss everything together until the peaches are evenly coated.
Roll out the 1 pie crust—store-bought works great, or use homemade—onto your air fryer tray or basket. Spoon the peach filling into the center, leaving a border around the edges. Fold the edges up over the filling and gently press them together with your fingers to seal.
Separate the 2 small egg whites into a small bowl, add 2 tablespoons water, and whisk until smooth. Brush this mixture over the dough edges, then sprinkle with 2 tablespoons sugar.
Set the air fryer temperature to 320 degrees F, air fryer setting, set cook time for 10-15 minutes.
