2largeZucchini, sliced
2largeEggs
1cupAlmond Flour
1/2cupParmesan Cheese
Instructions
Begin by slicing the 2 large Zucchini as thinly as possible—using a mandoline makes this easier. Whisk the 2 large Eggs in a small bowl, then combine the 1 cup Almond Flour and grated 1/2 cup Parmesan Cheese in a separate bowl.
Dip the zucchini into the egg wash, and then press each zucchini slice into the almond flour and Parmesan mixture, ensuring it’s fully coated.
Lightly spray the air fryer basket with cooking spray, then arrange the zucchini chips in a single layer without overlapping. Set air fryer temperature to 400 degrees F and set cook time for 8–10 minutes, flipping halfway through for even crispiness.
Repeat for the rest of the chips until they are all cooked through.
