Description

Crispy, keto-friendly zucchini chips made in the air fryer! Extra crispy, breaded, and perfect for low-carb snacks or quick appetizers.

Ingredients 

  • 2 large Zucchini, sliced
  • 2 large Eggs
  • 1 cup Almond Flour
  • 1/2 cup Parmesan Cheese

Instructions

  • Begin by slicing the 2 large Zucchini as thinly as possible—using a mandoline makes this easier. Whisk the 2 large Eggs in a small bowl, then combine the 1 cup Almond Flour and grated 1/2 cup Parmesan Cheese in a separate bowl.
  • Dip the zucchini into the egg wash, and then press each zucchini slice into the almond flour and Parmesan mixture, ensuring it’s fully coated.
  • Lightly spray the air fryer basket with cooking spray, then arrange the zucchini chips in a single layer without overlapping. Set air fryer temperature to 400 degrees F and set cook time for 8–10 minutes, flipping halfway through for even crispiness.
  • Repeat for the rest of the chips until they are all cooked through.
