Description

Crunchy, naturally sweetened homemade granola made in the air fryer in about 15 minutes. Toasty oats, golden nuts, and warm cinnamon — fully customizable and perfect over yogurt or by the handful.

Ingredients 

  • 2 cups old-fashioned rolled oats
  • 1/2 cup raw nuts, almonds, pecans, or cashews, roughly chopped
  • 1/4 cup unsweetened coconut flakes, optional
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 tablespoons honey, or maple syrup for vegan
  • 2 tablespoons coconut oil, or neutral oil, melted
  • 1 teaspoon pure vanilla extract
  • 1/3 cup dried cranberries or raisins, added after cooling
  • 1/4 cup chocolate chips, optional (added after cooling)

Instructions

  • Preheat the air fryer to 325°F (160°C). Line the basket with a piece of parchment paper cut to fit, leaving room at the edges for airflow.
  • Combine the dry ingredients: In a large bowl, stir together the oats, chopped nuts, coconut flakes, cinnamon, nutmeg, and salt.
  • Add the wet ingredients: In a small bowl, whisk the melted oil, honey, and vanilla. Pour over the oat mixture and toss until evenly coated.
  • Spread and press: Transfer to the lined basket in an even layer and gently press down with the back of a spoon for clusters. Don't overcrowd — cook in batches if needed.
  • Air fry at 325°F (160°C) for 12–15 minutes, checking at 7–8 minutes. For clusters, don't stir; for looser granola, stir once halfway. Watch the last few minutes so it doesn't burn.
  • Cool completely in the basket or on a tray, about 30–45 minutes, without stirring. The granola crisps as it cools.
  • Add mix-ins: Once fully cool, stir in the dried fruit and chocolate chips. Break into clusters and store in an airtight container.

  • Storage: Airtight container at room temperature up to 2 weeks; freezer up to 3 months.
  • Refresh crunch: Re-crisp in the air fryer at 300°F (150°C) for 3–5 minutes, then cool.
  • Oven method: Bake at 325°F (160°C) on a parchment-lined sheet for 20–25 minutes, stirring once.
  • Vegan: Use maple syrup instead of honey.
  • Nut-free: Replace nuts with pumpkin and sunflower seeds.
