Preheat the air fryer to 325°F (160°C). Line the basket with a piece of parchment paper cut to fit, leaving room at the edges for airflow.
Combine the dry ingredients: In a large bowl, stir together the oats, chopped nuts, coconut flakes, cinnamon, nutmeg, and salt.
Add the wet ingredients: In a small bowl, whisk the melted oil, honey, and vanilla. Pour over the oat mixture and toss until evenly coated.
Spread and press: Transfer to the lined basket in an even layer and gently press down with the back of a spoon for clusters. Don't overcrowd — cook in batches if needed.
Air fry at 325°F (160°C) for 12–15 minutes, checking at 7–8 minutes. For clusters, don't stir; for looser granola, stir once halfway. Watch the last few minutes so it doesn't burn.
Cool completely in the basket or on a tray, about 30–45 minutes, without stirring. The granola crisps as it cools.
Add mix-ins: Once fully cool, stir in the dried fruit and chocolate chips. Break into clusters and store in an airtight container.
