1poundYukon gold potatoes
2tablespoonsolive oil
1teaspoonchili powder
1teaspoonground cumin
1/4teaspoonchili pepper flakes, optional, for heat
1largelime, Juice of half a lime
1tablespooncilantro, minced, for garnish
Instructions
Wash 1 pound Yukon gold potatoes and dice into 1-inch cubes.
Add potatoes to a large bowl and toss with 2 tablespoons olive oil, 1 teaspoon chili powder, 1 teaspoon ground cumin, 1/4 teaspoon chili pepper flakes, 1 large lime, and 1 tablespoon cilantro until evenly coated.
