Description

A copycat of Denny's sausage gravy and biscuits with thick, creamy, peppery country sausage gravy ladled over fluffy buttermilk biscuits. Three-ingredient gravy, air fryer biscuits, ready in 25 minutes.

Ingredients 

  • 1 lb bulk pork breakfast sausage, regular or mild
  • ¼ cup all-purpose flour
  • 2½ to 3 cups whole milk, cold
  • ½ teaspoon freshly ground black pepper, plus more to taste
  • ¼ teaspoon kosher salt, or to taste
  • teaspoon cayenne pepper, optional
  • 2 tablespoons butter, only if needed
  • 16 ounces refrigerated biscuits, or 8 homemade buttermilk biscuits

Instructions

  • Arrange the biscuits in a single layer in the air fryer basket. Air fry at 330°F for 7 to 9 minutes until golden. Keep warm.
  • In a large skillet over medium heat, cook the sausage, breaking it into small crumbles, for 6 to 8 minutes until browned. Do not drain.
  • If the pan has less than 3 tablespoons of fat, add the butter. Sprinkle the flour over the sausage and stir constantly for 1 minute.
  • Pour in 1 cup of cold milk while stirring. Add the second cup and stir until smooth. Add the remaining milk a little at a time until the gravy coats a spoon but still flows.
  • Reduce heat to medium-low and simmer 3 to 5 minutes, stirring often, until thickened.
  • Stir in the black pepper, salt, and cayenne. Taste and add more pepper as needed.
  • Split the warm biscuits, lay them open-faced on plates, and ladle the gravy over the top. Finish with more black pepper.

Notes

  • Gravy thickens as it sits. If it gets too thick before serving, whisk in a splash of milk.
  • Sausage salt levels vary by brand. Always season at the end, after tasting.
  • Leftover gravy keeps 4 days in the fridge or 3 months frozen. Reheat over low heat with a little milk.
  • Use hot breakfast sausage for a spicy version.
