2medium yellow squash, sliced into ¼-inch rounds
½cupall-purpose flour
¼cupcornstarch
¼cupmilk
1cupcornmeal
¼cupgrated Parmesan cheese

½teaspoononion powder
½teaspoonpaprika
Instructions
Spray the air fryer basket with cooking spray. Preheat air fryer to 400°F for 3 to 5 minutes.
Slice the yellow squash into ¼-inch rounds. Pat dry with paper towels and season lightly with salt and pepper.
Set up three shallow bowls: Bowl 1 — flour. Bowl 2 — milk and cornstarch, whisked together. Bowl 3 — cornmeal, Parmesan, salt, pepper, garlic powder, onion powder, and paprika, mixed together.
Working one piece at a time, dip each squash round into the flour (shake off excess), then into the milk/cornstarch mixture (let excess drip off), then press into the cornmeal mixture to coat both sides.
Place breaded rounds in a single layer in the air fryer basket. Do not overlap. Lightly spray the tops with cooking spray.
Air fry at 400°F for 8 to 10 minutes, flipping halfway through, until the coating is deep golden and the squash is fork-tender.
