Ingredients 

For the Pork Belly:

  • 1 pound pork belly, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 stalk green onion, diced

Spicy Ginger Sauce (or use store-bought):

  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon shallot, minced
  • 2 small red chili peppers, seeded and sliced
  • 1 small mandarin orange
  • 1/8 cup maple syrup
  • 1/4 cup soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon sea salt
  • 1 teaspoon brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon water

Instructions

  • Preheat the air fryer to 385°F for 5 minutes.
  • Season the pork belly pieces with salt and pepper, tossing to coat.
  • Air fry at 385°F for 20 minutes, shaking the basket every 5 minutes.
  • Make the sauce: Blend ginger, garlic, shallot, chili peppers, mandarin orange, maple syrup, soy sauce, Worcestershire sauce, sea salt, and brown sugar until smooth. Whisk cornstarch with water to make a slurry, add to the sauce, then pour into a saucepan. Bring to a boil, then simmer for 10 minutes to thicken.
  • Toss the crispy pork belly in the sauce until evenly coated.
  • Garnish with green onions and serve immediately.
