Description

A copycat Starbucks protein box with air fryer chicken breast, hard-boiled eggs, cheddar, grapes, and almonds. About 40 grams of protein per box for roughly $2.50 — nearly double the original at a third of the price.

Ingredients 

For the chicken:

  • 3 boneless, skinless chicken breasts, 6-ounce
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried parsley, oregano, or basil
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika

For the boxes:

  • 4 large eggs
  • ½ cup raw almonds
  • 2 cups red grapes, and/or green grapes
  • 4 mozzarella or Colby-jack cheese sticks, each cut into 3 pieces

Instructions

  • Whisk the olive oil, lemon juice, salt, pepper, dried herbs, onion powder, and smoked paprika together in a small bowl.
  • Place the chicken breasts in a large resealable bag, pour the marinade over, seal, and massage to coat. Refrigerate 30 minutes, or up to 4 hours.
  • Arrange the chicken in the air fryer basket in a single layer. Cook at 400°F for 15–20 minutes, flipping halfway, until the internal temperature reaches 165°F. Rest 5–10 minutes before slicing.
  • Place the 4 eggs in the air fryer basket. Cook at 260°F for 17 minutes.
  • Transfer the eggs immediately to a bowl of ice water for 1–2 minutes, then peel under the water.
  • Slice the rested chicken into ½-inch strips.
  • Divide the almonds, grapes, and cheese pieces between four sectioned containers, then divide the chicken between them.
  • Add one egg per box, whole or halved and seasoned with salt and pepper.
  • Lid the containers and refrigerate up to 3 days.

Notes

  • For a higher-protein box, use two eggs and cut the almonds to 1 tablespoon per box.
  • Store components separately for up to 5 days and assemble each morning.
  • No air fryer? Bake the chicken at 425°F for 18–22 minutes and hard-boil the eggs on the stovetop.
  • Apple slices work in place of grapes — brush them with lemon juice so they don't brown.
