Description

Crispy caramelized Brussels sprouts tossed with applewood smoked bacon and a silky honey butter glaze. This copycat Ruth Chris Brussels sprouts recipe recreates the famous steakhouse side dish at home in 35 minutes, with both air fryer and oven directions included.

Ingredients 

For the Brussels Sprouts

  • pounds Brussels sprouts, trimmed and halved
  • 6 slices thick-cut applewood smoked bacon, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For the Honey Butter Glaze

  • 4 tablespoons unsalted butter
  • 3 tablespoons honey
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes, optional

Instructions

  • Prep the sprouts. Trim the stem ends and remove loose or yellowed outer leaves. Halve each sprout through the stem, quartering any that are unusually large. Pat thoroughly dry.
  • Render the bacon. Cook the chopped bacon in a large skillet over medium heat for 8 to 10 minutes, stirring occasionally, until crisp. Transfer to a paper towel-lined plate and reserve 2 tablespoons of the rendered fat.
  • Season. Toss the halved sprouts in a large bowl with the reserved bacon fat, olive oil, kosher salt, and black pepper until evenly coated.
  • Air fryer method. Preheat to 380°F. Arrange the sprouts cut side down in a single layer, working in batches if needed. Cook 12 to 15 minutes, shaking the basket halfway through, until deeply browned and crisp at the edges.
  • Oven method. Preheat the oven to 425°F with a sheet pan inside. Arrange the sprouts cut side down on the hot pan and roast 22 to 25 minutes without stirring, until well browned.
  • Make the honey butter. While the sprouts cook, melt the butter in a small saucepan over low heat. Remove from the heat, then whisk in the honey, apple cider vinegar, salt, and red pepper flakes if using, until smooth.
  • Toss and serve. Transfer the hot sprouts to a large bowl. Pour the honey butter over, add the reserved bacon, and toss to coat evenly. Taste and adjust salt. Serve immediately.

Notes

  • Fresh sprouts only. Frozen hold too much water to caramelize. If using them anyway, thaw completely, squeeze dry, and add 5 minutes.
  • Don't crowd. Overlapping sprouts steam. Two batches beats one crowded batch every time.
  • Honey goes in off the heat. Added to a hot pan it scorches and turns the glaze bitter.
  • Keep the loose leaves. Scatter them in with the sprouts; they crisp into chips.
  • Cut side down is where the caramelization happens. Arrange, don't dump.
  • Reheat in the air fryer at 375°F for 3 to 4 minutes to bring back the crisp edges.
  • Toss with the glaze right before serving — the sprouts soften as they sit.
