A smooth, creamy copycat of Panera's tomato soup made with simple pantry ingredients, with directions for the Instant Pot, Ninja Foodi, stovetop, and slow cooker.
Ingredients
1tablespoonolive oil
1largeonion, diced
1teaspoongarlic powder
28ouncescrushed tomatoes, or whole peeled tomatoes
28ouncesdiced tomatoes
1cupvegetable broth
1tablespoongranulated sugar
1/4cupfresh basil leaves
1teaspoonsalt
1/2teaspoonblack pepper
3tablespoonsunsalted butter
1/4cupheavy cream
2teaspoonshot sauce, optional
Instructions
Instant Pot / Ninja Foodi
Sauté the onion in the olive oil for 2–3 minutes, until softened.
Add the tomatoes, broth, sugar, basil, garlic powder, salt, and pepper. Stir well and scrape the bottom of the pot.
Lock the lid and pressure cook on High for 5 minutes. Natural release.
Stir in the butter, cream, and hot sauce. Blend until smooth.
Stovetop
Sauté the onion in the olive oil in a large pot over medium heat for 4–5 minutes.
Add the tomatoes, broth, sugar, basil, garlic powder, salt, and pepper. Simmer uncovered 20–25 minutes.
Remove from heat, stir in the butter, cream, and hot sauce. Blend until smooth.
Slow Cooker
Sauté the onion (optional) and add it to the slow cooker with the tomatoes, broth, sugar, basil, garlic powder, salt, and pepper.
Cook on LOW 4–6 hours or HIGH 2–3 hours.
Stir in the butter, cream, and hot sauce for the last 15 minutes. Blend until smooth.
Serve topped with croutons, shaved Parmesan, or fresh basil.
