3mediumGranny Smith apples, peeled, cored, diced ⅜-inch
¼cupgranulated sugar, plus ¼ cup for coating
2tspcornstarch
¾tspground cinnamon, plus 1 tsp for coating
⅛tspground nutmeg, optional
2tspfresh lemon juice
1tbspunsalted butter
1/2tsp salt, to taste
8egg roll wrappers, or 12 spring roll wrappers
Instructions
Toss diced apples with lemon juice. Whisk sugar, cornstarch, cinnamon, nutmeg, and salt; stir into apples.
Melt butter in skillet over medium. Add apples; cook 5–7 minutes until tender and glossy. Cool 15 minutes.
Place a wrapper diamond-oriented. Add 2–3 tbsp filling below center. Fold bottom up, brush sides with water, fold in, roll tight, seal with water.
Air fryer: Preheat 375°F. Spray rolls with oil. Cook 8–10 min, flipping at 5 min, until golden. Deep fry: Heat oil to 350°F. Fry 2–3 min, turning, until golden. Drain on a rack.
Mix remaining sugar and cinnamon in a dish. Roll hot rolls in cinnamon-sugar to coat. Serve immediately.
Notes: Use spring roll wrappers for the closest texture match to Panda Express. Cool filling fully before rolling or wrappers will tear. Don't overstuff. Reheat in air fryer at 350°F for 2–3 minutes — never microwave.
