Description

A copycat of the Nothing Bundt Cakes Lemon Blueberry flavor, baked in the air fryer. Buttermilk lemon cake studded with wild blueberries, finished with piped cream cheese frosting ribbons.

Ingredients 

Cake Ingredients:

  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 tablespoons lemon zest, about 2 lemons
  • 2 large eggs, room temperature
  • teaspoons vanilla extract
  • 2 tablespoons fresh lemon juice
  • ½ cup buttermilk, room temperature
  • 2 cups all-purpose flour, divided
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 cup wild blueberries

Frosting Ingredients:

  • 4 ounces cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • cups powdered sugar
  • 1 teaspoon fresh lemon juice
  • 1/8 teaspoon of salt
  • 1 teaspoons milk, if needed

Instructions

  • Rub the lemon zest into the granulated sugar with your fingertips for 30 seconds, until fragrant and damp.
  • Cream the butter and lemon sugar on medium-high for 3 minutes until pale and fluffy.
  • Add the eggs one at a time, beating after each. Mix in the vanilla and lemon juice.
  • Toss the blueberries with 1 tablespoon of the flour and set aside.
  • Whisk the remaining flour with the baking powder, baking soda, and salt.
  • Add the dry mixture and buttermilk alternately, beginning and ending with dry, in five additions. Mix on low just until combined.
  • Fold in the floured blueberries by hand.
  • Grease a 7-inch bundt pan thoroughly, including the flutes. Fill no more than two-thirds full.
  • Air fry at 310°F for 30–35 minutes, tenting with foil after 20 minutes if browning quickly. The center should reach 200–205°F.
  • Cool in the pan 10 minutes, then invert onto a rack and cool completely, about 45 minutes.
  • For the frosting, beat the cream cheese and butter smooth. Add the powdered sugar, lemon juice, and salt; beat 2 minutes until fluffy.
  • Pipe thick ribbons from the outer edge toward the center hole. Refrigerate until serving.

Notes

  • Buttermilk substitute: 1½ tablespoons lemon juice or vinegar plus whole milk to the ½ cup line, rested 5 minutes.
  • Do not thaw frozen blueberries; add 2–3 minutes to the cook time.
  • Oven method: 350°F for 35–40 minutes.
  • Bake leftover batter as muffins, 12–14 minutes.
