Copycat Maggiano's Butter Cake (Gigi's Butter Cake)

Description

A rich yellow butter cake soaked in warm brown butter glaze and served with strawberries and whipped cream — a copycat of the signature dessert from Maggiano's Little Italy.

Ingredients 

Cake

  • 1 cup unsalted butter, softened
  • cups granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup whole milk, room temperature

Brown Butter Glaze

  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • teaspoon salt

To Serve

  • Fresh strawberries, sliced
  • Whipped cream

Instructions

  • Heat oven to 350°F. Grease a 9-inch round pan and line the bottom with parchment.
  • Whisk flour, baking powder, and salt in a small bowl. Set aside.
  • Beat butter and sugar on medium 3–4 minutes until pale and light.
  • Add eggs one at a time, beating after each. Stir in vanilla.
  • Add dry ingredients in three additions, alternating with milk, beginning and ending with flour. Mix on low just until combined.
  • Spread batter in the pan and bake 30–35 minutes, until a toothpick comes out clean.
  • While the cake bakes, melt ½ cup butter in a light-colored saucepan over medium heat, 5–7 minutes, until it foams, quiets, and shows golden-brown flecks. Remove from heat immediately.
  • Stir sugar and water into the hot butter until dissolved. Return to low heat, simmer 2 minutes, then remove and stir in vanilla and salt.
  • Poke the hot cake all over with a skewer and pour the warm glaze evenly over the top.
  • Rest in the pan 20 minutes, then slice and serve warm with strawberries and whipped cream.

Notes

Cake and glaze must both be warm when combined. Use a light-colored pan for browning butter so you can see the color change.
