Description

A 5-minute copycat of Kinder's Santa Maria Style Seasoning — garlicky, peppery, and lemon-bright. Made with 11 pantry spices. Perfect on tri tip and steak.

Ingredients 

  • 5 tablespoons fine sea salt
  • 3 tablespoons granulated garlic
  • 2 tablespoons granulated onion
  • 2 tablespoons coarse ground black pepper
  • 1 tablespoon turbinado sugar
  • 1 tablespoon sweet paprika
  • 1 tablespoon dried parsley
  • 1 teaspoon citric acid
  • 1 teaspoon dried lemon zest
  • ½ teaspoon dried rosemary, crushed fine
  • ½ teaspoon cayenne pepper
  • ½ teaspoon celery seed, optional

Instructions

  • Add all ingredients to a medium bowl, crushing the parsley and rosemary between your palms as you add them.
  • Whisk 30 seconds, until the color is completely even and no clumps remain.
  • Transfer to an airtight jar or spice shaker. Rest overnight for best flavor.
  • Store in a cool, dark place up to 6 months.

Notes

Use 6 Tbsp Morton kosher salt or 8 Tbsp Diamond Crystal in place of the fine sea salt. Use 1 Tbsp per pound on beef, 2 tsp per pound on chicken. For the best crust, season tri tip and refrigerate uncovered 4–24 hours before cooking.
