Description

Diced russets, a quick soak, and 20 minutes at 400°F give you copycat IHOP crispy breakfast potatoes with a crunchy shell and a soft center. No deep frying.

Ingredients 

  • pounds russet potatoes, about 3 medium, peeled and cut into ½-inch cubes
  • 2 tablespoons olive oil, or avocado oil
  • 1 teaspoon kosher salt, plus more for finishing
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika, optional
  • ¼ teaspoon black pepper

Instructions

  • Place the diced potatoes in a bowl, cover with cold water, and soak for 15 minutes. Drain and pat completely dry.
  • Toss the potatoes with the oil, salt, garlic powder, onion powder, paprika, and pepper until evenly coated.
  • Preheat the air fryer to 400°F for 3 minutes.
  • Spread the potatoes in a single layer in the basket. Air fry for 18 to 20 minutes, shaking the basket twice, until deep golden and fork tender.
  • Transfer to a bowl, sprinkle with a pinch of kosher salt while hot, and serve immediately.
