Diced russets, a quick soak, and 20 minutes at 400°F give you copycat IHOP crispy breakfast potatoes with a crunchy shell and a soft center. No deep frying.
Ingredients
1½poundsrusset potatoes, about 3 medium, peeled and cut into ½-inch cubes
2tablespoonsolive oil, or avocado oil
1teaspoonkosher salt, plus more for finishing
½teaspoongarlic powder
½teaspoononion powder
¼teaspoonpaprika, optional
¼teaspoonblack pepper
Instructions
Place the diced potatoes in a bowl, cover with cold water, and soak for 15 minutes. Drain and pat completely dry.
Toss the potatoes with the oil, salt, garlic powder, onion powder, paprika, and pepper until evenly coated.
Preheat the air fryer to 400°F for 3 minutes.
Spread the potatoes in a single layer in the basket. Air fry for 18 to 20 minutes, shaking the basket twice, until deep golden and fork tender.
Transfer to a bowl, sprinkle with a pinch of kosher salt while hot, and serve immediately.
